What Is a Dehydrated Sourdough Starter?

A dehydrated sourdough starter is simply an active starter that has been dried for long-term storage. Drying pauses the activity of the wild yeast and lactic acid bacteria, allowing the starter to remain shelf stable until you’re ready to use it.

Once water and fresh flour are added, the culture gradually becomes active again.

What You’ll Need

  • 15 g dehydrated sourdough starter
  • Filtered or non-chlorinated water
  • Unbleached bread flour or all-purpose flour
  • A clean glass jar
  • Spoon or silicone spatula
  • Kitchen scale (recommended)

Step 1: Rehydrate the Starter

Add:

  • 15 g dehydrated starter
  • 30 g lukewarm filtered water

Stir until the flakes are completely moistened.

Allow the mixture to sit for 2–4 hours so the dried culture can fully absorb the water.


Step 2: Add Flour

After the starter has softened, stir in:

  • 30 g flour

Mix until no dry flour remains.

Cover the jar loosely with a lid or cloth and leave it at room temperature for 24 hours.


Step 3: First Feeding

After 24 hours you may notice small bubbles. Don’t worry if activity is minimal—that’s completely normal.

Discard approximately half of the starter.

Feed with:

  • 30 g flour
  • 30 g filtered water

Mix thoroughly and cover loosely.


Step 4: Continue Daily Feedings

Repeat this feeding every 24 hours.

Each day:

  1. Discard about half.
  2. Feed equal parts flour and water by weight.
  3. Mix well.
  4. Leave at room temperature.

As the wild yeast multiplies, the starter will become stronger and more active.


What to Expect

Day 1

The starter is mostly waking up.

Very little activity is expected.


Day 2

You may begin seeing a few bubbles.

A slightly tangy aroma may develop.


Day 3–4

The starter should become noticeably more active.

It may begin rising after feedings.


Day 5–7

Most healthy starters will begin doubling in size within 4–8 hours after feeding.

Once your starter consistently doubles after feeding, it’s ready to bake with.

Keep in mind that timing can vary depending on room temperature, flour type, and the strength of the starter.


How Do I Know It’s Ready?

Your starter is ready for baking when it:

  • Doubles in volume after feeding
  • Has lots of bubbles throughout
  • Smells pleasantly tangy (not rotten or moldy)
  • Passes the rise test consistently

Don’t worry if it takes a little longer than expected—every starter is unique.


Tips for Success

Use Filtered Water

Chlorine and chloramine in some tap water may slow fermentation. Filtered or dechlorinated water is a good choice if available.


Feed at the Same Time Every Day

Keep It Warm
